Corn and Chile Tomato-Less Salsa

This is a wonderfully unique salsa with "a sweet combination of corn, red peppers, onion and a touch of heat." It's great with tortilla chips, but would also be good as a topping for grilled chicken, pork chops, etc. I could personally eat it by the spoonful!!

Try some of this on a baked potato instead of the usual butter or sour cream.
