Pineapple Salsa

This salsa has an exemplary blend of spicy and sweet. The heat is not too aggressive for the spice-adverse, but there is enough kick to make it interesting. We usually have it with the flax seed chips, but I think it would go great with fish or chicken, too.

I spooned some over red snapper, baked it and it was delish. I highly recommend it for baking and dipping!

I experienced something very terrible while eating the pineapple salsa: It was so good that I had to use extreme restraint to keep from eating the whole jar! I was eating it as a snack with chips, but can see how it would be good as a salsa served over a dish.

The salsa is awesome. I make a dip with it. I also use it in ground meat to make hamburgers. They are awesome. Top the burgers with sour cream and you got a fiesta burger!
