Winters Night Sausage and Lentil Stew
(2 votes)This supper combo is quick, hugely tasty and will warm you up on the most miserable cold night. Basic TJ ingredients are:
TJ's fully cooked chicken sausage with sun-dried tomato and basil (pack of 5)
TJ's canned lentil and vegetable soup (1 can per person)
some leftover spaghetti sauce (doesn't everybody have part of a jar in the fridge?)
optional: leftover or frozen vegetables. TJ's green beans are good, also corn, diced potatoes, carrots, etc.
Slice the sausages (one per person) into 1/4 inch thick rounds and saute for a couple of minutes in a little olive oil til they turn golden brown (you can add some chopped garlic to the saute, too). Dump in the lentil soup and about 1/4 cup of tomato sauce for each can of soup used. If you're feeling adventurous, splash in some white wine.
Heat the whole mess up for a few minutes and serve with slabs of TJ multigrain bread or rosemary focaccia. Yum!
