Pumpkin Miso Soup4 cups Trader Joe's Organic Canned Pumpkin1/2 cup chopped onion 3 cloves of garlic, minced 1/2 cup chicken stock 3 Tbsp miso 1/4 cup olive oil salt and pepper to taste In large pot, combine pumpkin, onion, garlic, and chicken stock. Bring to boil and boil for 10 minutes. Add miso and boil for 5 more minutes. Place in blender, and on high, slowly pour in olive oil. Season with salt and pepper. Serve hot. Makes 8 servings.
