Pumpkin Praline Chocolate Truffles
These are a fun hearty version of the popular chocolate truffles. Using both Trader Joes granola and pecans as the outer coating is quick and easy- not to mention tasty.

4 oz cream cheese, softened
1 1/2 cups confectioner’s 10 X sugar
¾ teaspoon Pumpkin Pie Spice
1 /4 cup Trader Joe’s canned Pumpkin
1 1/4 cups semi sweet chocolate bits, melted
3 /4 cup Trader Joe’s Pecan Praline Granola
1 /4 cup Trader Joe’s pecan halves, coarsely chopped
1 tablespoon Cinnamon

Place the room temperature cream cheese into the bowl of a mixer and beat on low until smooth. Add the confectioner’s sugar and mix in for 2-3 minutes. To this add the spice and the pumpkin. Mix in to blend. Add the melted chocolate and mix on low for 2 minutes , scraping down bowl with a spatula halfway thru.
Place the mix into a small bowl and cover with plastic wrap. Place in refrigerator for an hour.
Take the granola, coarsely chopped pecans and cinnamon and place in a small food processor ,nut grinder or coffee grinder. Pulse until mix is finely ground or ground to your liking. Place mix in a small bowl.
Remove the chocolate from the refrigerator and use a melon baller or small ice cream scoop and make 1 inch chocolate balls. Place each on a wax paper covered tray. When they are all formed roll each truffle ball in your hands for a few seconds. This will melt the outside , then roll in the ground granola –nut mixture. The mixture will adhere best when the outer chocolate is slightly tacky. Place the rolled truffles in individual paper candy cups to serve.
Yield : 30 truffles
