Pure Pumpkin Bread

1 1/2 cups whole wheat flour
1/4 cup wheat germ
1/3 cup sugar
1 teaspoon cinnamon
2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup oil
1/4 cup soy milk
3/4 teaspoon vanilla
1 cup Trader Joe’s Organic Canned Pumpkin
1/2 cup chopped walnuts

Preheat oven to 350. In a large mixing bowl, stir together flour, wheat germ, sugar, cinnamon, baking powder, baking soda, and salt. In a medium sized mixing bowl, combine canola oil, soy milk, vanilla and 1 cup of Trader Joe’s Organic Canned Pumpkin. Add wet ingredients to the dry ingredients’ mixture. Mix until thoroughly combined into a thick batter.

Pour batter into a nonstick loaf pan. Spread walnuts on top of batter. Bake for 45 to 50 minutes, or until a toothpick inserted comes out clean. Cool for 10 minutes in the pan; transfer to a cooling rack and cool completely before cutting.

Note: This is a pumpkin bread everyone can enjoy: adults, children, health nuts, vegans, those allergic to dairy and for those who don't like nuts, they're easy to take off the top (or leave the nuts off for those allergic to nuts). My kids love this bread when I slice it and cut it with a pumpkin shaped cookie cutter!

I was looking for something I could make with canned pumpkin. This sounds perfect! I'll let you know how it turns out. :)
