Crockpot Chili
(5 votes)Rate this listing
All Trader Joe's ingredients:
1 pkg chicken chorizo
1 pkg tri tip asada
2 can organic red kidney beans
1 pkg frozen cheese and green chile tamales
1 tsp cumin
1/2 jar red mole
1 can 28 oz plum tomatoes
Directions:
1 crumble chorizo
2 dice tri tip to bite size
3 drain and rinse beans
4 defrost and mush up tamales
5 sprinkle cumin over everything
6 mush mole with tomatoes and pour over everything
Cook on low per directions of your particular crock pot. About 8 -10 hours.
About 1 hour before chili is to be done taste for seasoning. You may want to adjust for salt (maybe garlic salt), pepper and maybe more cumin. If chili is too thick add more tomatoes, broth, beer or whatever. If you don't like beans omit them or substitute beans of your choice.
PS: Crockpots are supposed to make things quick and easy but if you have the time do the following:
a. brown and crumble the chorizo
b. blend the tamales, red mole, tomatoes and cumin

Another waste of good ingredients. Anyone who dices tri-tip, mushes up tamales and drains and rinses beans should be shot. When are you going to get a person on this department who really knows how to cook?

...and what's wrong with draining and rinsing canned beans? I read that that helps alleviate the gas producing factor (also lowers the sodium). Speaking of which, TJ's white kidney beans are rather crunchy...or did I just get a bad batch?

this recipe makes me cringe when i see how inefficient and wasteful it is.
what about just crockpotting veggie chili and having the tamales on the side?
