Carnitas Enchiladas a la Trader Joes

1 (12-oz) package Trader Joes traditional carnitas (shrink-wrapped in deli section.
1 package Trader Joes handmade corn tortillas
1-2 Bottles Trader Joes Enchilada Sauce
1 onion, chopped
1 green bell pepper, chopped
corn or canola oil
butter
1 package mexican blend cheese, shredded

Saute chopped onion and bell pepper in a little oil and butter until soft. Set aside. Heat Carnitas occording to directions and shred, removing any fat.
Wrap tortillas in wet paper towels and heat in microwave (about 45 seconds)
In 9x13 pan, pour a small amount of enchilada sauce and spread over bottom of pan. Pour rest into a shallow bowl, like a pie plate.
Dip heated tortillas in enchilada sauce and lay in pan. In middle of tortilla spoon some carnitas, onion and pepper mixture and cheese. Fold ends over (left and right) to form enchilada and flip over. Repeat and continue until ingredients are gone. When finished, pour remaining sauce over enchiladas and sprinkle cheese on top.
Heat in oven at 350' for approx 25 minutes. makes about 7 to 8 enchiladas.
Serve with sour cream and avocado slices.
