Chicken and Wild Rice Casserole

This is so easy, but so comforting and delicious! My husband doesn't even complain about the Soycotash (it's my favorite, but he's picky).
1 Trader Joe's Whole Roasted Chicken
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream
1 medium onion, diced
1 package Trader Joe's Basmati and Wild Rice, cooked according to package directions
1 package Trader Joe's Soycotash frozen veggies
2 cups grated semi-hard cheese, such as Kerrygold's Dubliner
1 cup grated cheddar cheese
Salt and pepper
Pull the chicken apart from the bone, removing the skin as you go. Chop the chicken into bite-sized pieces. In a large mixing bowl, combine chicken, soups, sour cream, onion, rice, veggies and semi-hard cheese along with 1 teaspoon each salt and pepper. Spread mixture evenly into a greased casserole dish, and top with additional salt and pepper. Finish by topping with grated cheddar cheese. Bake in a 375 degree oven for 35-40 minutes, until warm throughout and cheese is melted and bubbly.
