Meatball Soup
(0 vote)Rate this listing
I use the Party Size Meatballs to make a most delicious Meatball Soup. I purchase most everything at Trader Joe's.
Since I love to make soups, I created this without measurements, so I do not have the recipe written out formally, however, here are the ingredients:
MEATBALL SOUP:
saute together:
onion - chopped
celery - chopped
carrots - chopped
Add Beef or Vegetable broth to the above mixture and your desired seasoning (salt, pepper, Italian Seasoning is a good one, 2 Bay leaves if you have them, thinly slivered garlic.)
Add a large can or two of tomatoes (if whole, then mash them before adding to the soup).
Heat on medium and bring just to a boil and turn heat down.
Add Trader Joes Grilled Corn,
add The Mini Meatballs (you can, pre-cook them to remove some of the grease)
continue to heat for about an hour. Season to taste. NOTE: the garlic adds a wonderful flavor - it should be very thinly sliced for a delicate flavor.
For a more Italian touch - add cooked Orzo at the end.
This is a fabulous soup. Sorry - I never wrote the recipe. I just make it without a recipe.
