Mediterranean Polenta with Freekeh

1 18 oz. tube Trader Joe's Polenta, sliced
1 8 oz. pkg. Trader Joe's Greenwheat Freekeh
1 16 oz. pkg. Trader Joe's Misto alla Griglia [frozen Marinated Grilled Eggplant & Zucchini]
1/2 jar Trader Joe's Red Pepper Spread with Eggplant & Garlic
8 oz. tomato sauce (homemade or any Trader Joe's style)
1/2 cup grated cheese, cheddar or mozzarella and some parmesan
Spread bottom of 1-2 qt. glass (about 8x12) casserole with a little Red Pepper Spread.
Put slices of Polenta on top. Add a layer of Eggplant slices. Put a spoonful of Red Pepper Spread on top of each piece of Eggplant and spread. Sprinkle 1/2 pkg. of Freekeh on top. Put another layer of Polenta on top. Add a layer of Zucchini slices. Put a spoonful of Tomato Sauce on top of each piece of Zucchni and spread. Add rest of Freekeh. All the Polenta, Freekeh, Eggplant & Zucchini should now be used. If in a rush, warm in microwave for 3-4 minutes, otherwise put in 375 degree oven for 10 minutes. Sprinkle grated cheese over everything and put in oven for another 5-10 minutes until everything is hot and cheese is melted.
Makes a complete vegetarian meal.
