Primo Pumpkin Apple Soup

4 Trader Joe's applewood smoked bacon slices
2 teaspoons Trader Joe's extra virgin olive oil
1 cup chopped onion
1 cup chopped peeled Granny Smith apple
1/2 cup chopped celery
2 teaspoons minced garlic
1/2 teaspoon Trader Joe's pumpkin pie spice
1/2 teaspoon sea salt
2-1/2 cups Trader Joe's canned pumpkin
2 cups Trader Joe's vegetable or chicken broth(in the resealable carton)
1-2 ounce piece Trader Joe's Parmesan cheese
Chop bacon then saute until crisp in a large stockpot. Remove with a slotted spoon to paper towels to drain. Remove all but 2 teaspoons of dripings from the stockpot then add the olive oil and heat over medium. Stir in the onion, apple and celery, saute for 10 minutes. Add the garlic, pumpkin spice and salt, saute 1 minute more. Stir in the pumpkin and broth. Stir until heated through. Ladle soup into 6 bowls then sprinkle each with the cooked bacon bits. Using a vegetable peeler shave the cheese over the tops for a garnishment. Serves 6.
