Quinoa and Marinated Onion Salad

1 Box Quinoa Cooked and cooled
1 Large purple onion chopped
1 bottle of Trader Joe's Balsamic Vinaigrette
1 bag baby spinach chopped
1 tub Feta Cheese with Mediterranean Herb
1/4 cup chopped fresh basil
1 bag Pignola, pepita & almond mix
Salt and pepper to taste
Important first step-Chop the onion and marinate in the balsmic dressing overnight. The onions just pop with flavor.
next day cook the Quinoa and cool.
Toss all ingredients together and chill.
All my ingredients are based on Trader Joe's products

This recipe, is a great blend of various items used in an unusual way.
Janette proves that an amount of food knowledgr and thoughtcan meld ordinary flavors and create something much better than the sum of its parts!!

Janette is the Demo Goddess at my store in Anthem. She is always coming up with Fabulous yet simple to make recipes. I loved this one!
