Sweet and Sour Cabbage Apple Delight

Ingredients:
--1 medium sized onion
-3 cups shredded red and green cabbage
--2 granny smith apples
--1/4 cup olive oil
--1/8 cup lemon juice
--1/8 cup apple cider vinegar
--1/8 cup dried cherries
--1/8 cup dried cranberries
--pinch cinammon
--1/4 cup brown sugar
--1/2 cup crushed walnuts
--dash salt and pepper
Step 1: saute onion in large skillet until carmelized
Step 2: add cabbage and apples and saute for 4-5 minutes until mixture softened
Step 3--add dried fruit, nuts, cinammon, brown sugar, 1/3 cup water and stir mixture well before covering the pan. allow ingredients to simmer on low heat for approximately 10 minutes and serve.

Not a lot of work since Trader Joe's sells bagged shredded cabbage. Serve this up with some nice pork or chicken. The recipe calls for cherries and cranberries -- use Trader Joe’s Golden Berry Blend (raisins, cherries, cranberries& blueberries) -- splendid! It was good made warm but oh, so good the next day, cold, marinated. Yum.
