Pumpkin Pecan Pie Bars

1 17.5 ounce Trader Joe's Pumpkin Bread & Muffin Mix
1/2 cup vegetable oil
4 eggs, divided
3/4 cup corn syrup
3/4 cup sugar
1/4 cup melted butter
1 teaspoon vanilla
1/2 teaspoon salt
2 cups pecans
Preheat oven to 350 degrees. Spray 9" x 13" pan with non-stick cooking spray.
Mix together first two ingredients and one of the eggs. Press into the bottom of 9" x 13" pan.
Bake 15 minutes.
Mix together remaining eggs and next 5 ingredients, stir in the pecans and pour on baked crust.
Bake an additional 25-30 minutes, or until set.
Cool and cut into bars.
Makes about 24 bars.

I had some doubts about this recipe at first--the lack of water in the crust made it pretty tough to work with as it was extremely sticky. But, it turned out to be quite yummy and was enjoyed by everyone at my NYE party!
