Cornbread pancakes
(1 vote)Rate this listing
I got this from my sister, who also shops at Trader Joe's for everything.
Just take the Cornbread Mix, put some in a bowl and add water to the consistency that works for you. My sister likes her pancakes thicker than I do. I like my pancakes a little thinner. Stir the mix until the mix is smooth. There will be lumps from the corn. I let it sit for a bit so that the corn gets plumper.
Heat griddle to 350. Add butter or I use Earth Balance, and let it melt. Pour your pancake mix onto the griddle. When the pancake edges turn a little brown, flip them over. It doesn't take long.
We use Trader Joe's real maple syrup and serve with Morning Star veggie sausages. YUM!

do I still need to add the egg and milk or just water?
Are you just adding water, and nothing else, or actually making the mix with the eggs, and then thinning it with extra water to the desired consistency? Great idea. Just clarify it a bit for us, please!
