Indredients:
3 1/3 cups Flour
3 cups Sugar
2 teaspoons Baking Soda
1 1/2 teaspoons Salt
1 Tablespoon Ground Cinnamon
2 teaspoons Ground Nutmeg
1/2 teaspoon Ground Ginger
1 teaspoon Trader Joe's Pumpkin Pie Spice
2 1/4 cups (18 oz) Trader Joe's Organic Canned Pumpkin
1 cup Vegetable Oil
2/3 cup water
4 Eggs, slightly beaten
Preheat oven to 350F
In large mixing bowl; combine dry indredients, and stir well. Add TJ's pumpkin, oil, water and eggs; beat for 2 minutes with electric mixer at medium speed.
Spoon batter into 2 greased and floured 9x5x3 inch loaf pans. Bake for between 1 hour 30 - 1 hour 45 minutes, or until toothpick comes out clean. Cool for 10 minutes and remove from pans onto cooling rack. Let cool another 30 minutes.
Serve warm with Trader Joe's Pumpkin Butter and some hot apple cider.
To add some extra zip to the recipe; try adding Trader Joe's Dried Cranberries, or Trader Joe's Pecans.
