Green Bean Casserole

1 bag Trader Joe's frozen french green beans
2 pkgs frozen spinach artichoke dip
3/4 cup half and half or milk
1/2 cup Trader Joe's dry toasted sliced almonds
1 cup Trader Joe's fried onion pieces
Put green beans in a microwave bowl. Add 1/4 cup water. Cover and microwave 4 minutes. Uncover, stir, recover and microwave 3 more minutes.
Prepare frozen spinach and artichoke dip according to directions and then wisk in half and half or milk until smooth.
combine green beans, dip mixture and almonds in a large bowl. Pour into a large casserole dish. Top with the fried onions and bake in preheated 325 degree oven for 20 - 30 minutes or until bubbly.

This recipe won the November 2006 recipe contest and is so quick, easy and delicious - definitely a keeper.
My only comment is that you might think the dip makes this high cal and high fat, but the dip is actually not very heavy at all. The Fried Onion Pieces do add the bulk of the calories and fat. Instead of one cup, I used half a cup of the onion pieces and save about 700 calories. The dish was still spectacular!

are you just defrosting the green beans? (I've never owned a microwave)

Most frozen veggie recipes specify cooking them at 7 minutes in a microwave, more or less, so I think you are doing more than just defrosting them.
Can you assemble this a few days in advance and store in fridge? Will it get soggy or weird or anything? --Thnx.

What size bag of green beans? How many oz. in the artichoke dip? I have to make substitutions on all the products until My TJ'S openns in Charlotte, NC.

You can steam them or gently boil them on a stove top. Then drain and continue with the recipe. Don't overcook the beans because they will be reheating in the oven. But certainly cook them first.

I never microwave them I steam them using a metal steamer basket and they are wonderful. They do need to cook but not until thet're limp.

Tried this one during Christmas holiday and even the kids liked it. For leftovers, I reheated it and just added more onion topping. For a family dinner though, would halve the recipe.

This was a great change from the regular casserole. My TJs was out of onions, so I used their sesame sticks. MMM good!!!!

I would like to make this for a Pot Luck. How many do you think this will serve. Hard to think of spinach and beans together but I want to give it a try.
