Mexican Sloppy Trader Joes1 pound ground beef (ground turkey or chicken may be substituted)1 cup TJ's frozen roasted corn 1 1/2 jars TJ's 3 Pepper Salsa salt/pepper 1 cup Mexican blend shredded cheese Honey Wheat Buns (tortillas can be substituted if you'd rather have burritos) Brown the meat and season with salt/pepper. Drain any fat. If you use lean meat, you don't need to. Add the corn and salsa and just heat through. Spoon on to buns and top with cheese. Serve sloppy joe style. So easy and so flavorful!! The leftovers make a great omelette the next morning. You can top with the leftover salsa and some sour cream. It's really good. This a recipe for lazy cooks--easy to throw together, fairly nutritious, flavors that almost everyone likes. Nothing subtle here.
