Pumpkin Oatmeal Cookies

Preheat oven to 350°
Ingredients
1- Box of Trader Joe’s Pumpkin Bread and Muffin mix
1/4-1/2 cup- Trader Joe’s Golden Berry Blend (raisins, cherries, cranberries& blueberries)
1 – Stick of butter softened
1/4 - cup of canola oil
2- eggs
3/4 cup of rolled oats (oatmeal)
1/4 cup of walnuts
Directions:
Combine oats, eggs, butter and oil and let sit for 5-10 minutes to soften oats
Add walnuts & berry blend to batter, mix, then begin folding in dry bread muffin mix until all is moistened. (Will be thick as cookie dough should be, not pourable)
Spoon onto lightly greased cookie sheet by teaspoons, about 1-2” between cookies. Press down if you prefer thinner cookies or leave in a ball for thicker cake like cookies.
Bake at 350 degrees for about 12 minutes

I made these cookies tonight and they are fantastic. I suspect they will be a big hit at work tomorrow.

TJ's was out of the Golden Berry blend and we improvised. Really great tasting and wholesome. We made the cake-like cookies by shaping into balls.
