Quick Chicken Curry

1 jar Curry Simmer Sauce
1 lb chicken
1-2 package(s) frozen brown rice
your choice of veggies
fresh cilantro to garnish
The Curry Simmer Sauce is an excellent base for chicken, meat or veggie curries. Just add the sauce and 1 cup of water to a skillet. Cube up the chicken or substitute another meat, fish or shrimp. Add cut up veggies such as cauliflower, green beans, okra, etc.
Serve with fresh chopped cilantro and Trader Joe's naan (from the frozen section) on top of the frozen brown rice (which is wonderful! -- 3 minutes in the microwave.)

I was pretty disappointed with this curry sauce. Instead of adding a cup of water, I only added a 1/4 cup. And it was really watery, thin and bland. I tried to pep it up with some herbs and spices of my own. But I'd have to say that my chickpea & cauliflower curry that I mind was my least favorite TJ's meal in a long time. This simmer sauce is in desperate need of some flavor. Yeah.
