Spicy Red Mole Chicken

1 can Cuban Black Beans
Simmer together, stirring to keep it from burning on the bottom
In a separate pot, bring enough broth or water to cover the chicken to a boil. Add thawed chicken breast or thighs (about 1 lb). Turn down the heat to a simmer and cook the chicken until it is just done (don't overcook!).
Drain and cut up chicken into bite-size pieces and add to the simmering beans and mole for about 5 minutes to incorporate the flavors.
This is great with rice and a salad.

Which mole sauce did you use? There's the one that's non-refridgerated (glass jar), and the one that's in the plastic jar in the refridgerated area. Thanks!

The mole sauce is tasty with chicken, some rice, and a salad. So easy too!
