Roasted Beets and Goat Cheese

One package of roasted beets (can be found in the produce section)

Trader Joe's goat cheese crumbles

Toasted walnuts (can be done in the oven or on the stovetop)

Balsamic vinegar

Olive oil

Salt and pepper



Warm beets (if preferred) and slice into 1/4 inch slices. Sprinkle with desired amounts of goat cheese and toasted walnuts. Drizzle with about 1 tablespoon each of balsamic vinegar and olive oil. Season with salt and pepper.

This is a great beet salad. So much easier than using fresh raw beets.
