This is truly a delicious soup and so easy because you just pull it out of the pantry. Great extra when you are making chili or burritos or tacos. We also add a dollop of sour cream.
This soup is so good. Great for a quick snack. My dad got it for me, and now I have to go back and get a whole bunch more, especially now that it is getting colder!
I added diced up grilled chicken and some extra corn, really awesome!
I made enchiladas and used this as the sauce when I baked them. Awesome!

I love this. I use it as a sauce, or as a soup base adding more veggies adn tortilla chips on top, or you can eat it as is when you are in a hurry.
I like to add roasted corn, various steamed veggies and hominy. top with tortilla chips and cilantro. Yum! Good stuff. |
