Roasted Rosemary Boneless Chicken Breast with Wild Rice
Another fresh case wonder from TJs. Two large boneless breasts roasted and served over a wild rice pilaf (mostly white rice with some wild rice mixed in). The breasts aren't skinless, but the skin easily slides off once you've warmed them, although you lose a little taste and spice if you do this.

Despite the rosemary, which I don't normally care for, there's actually nothing overpowering in this dish. Huge amount of rice too--at least a cup and a half.

620 kcals for the whole container, a little high in fat due to the butter and chicken fat at 30g (10g saturated). Very sneakily, this assumes you've removed the skin.

Most cashiers tend to notice these and mention how great they are when I buy them (which is weekly!) A little pricey at $5.99, but man, they're so good, I don't care! If someone wants to submit a mock recipe for this, I'll be your slave! ;-)

The rice is very tasty, and the chicken good too. Nice 2-3 person meal.

This is a great quick meal that should be shared between two people pretty comfortably. I like to make a small spinach salad with raspberry vinaigrette and add some baby peas to the rice.

This is a great meal, I take them for lunch a lot. It's perfect because my husband works with me so we can both eat half.

Also I wrote TJ's about the vague nutritional info with the skin. The stats on the main NI are actually WITH skin. So, it's not sneaky at all! The part where it says without skin would be xxcal/xxfat (can't recall off hand) is actually just a helpful way of REDUCING the calories!
