Salmon and Egg Breakfast MuffinsIngredients:-1 container Egg White Salad with Chives -4 slices of smoked salmon -2 English muffins, toasted -8 thin slices of cucumber -4 slices of tomatoes -4 slices of lettuce leaves -2 Tbsp Dijon mustard Prep: 1. Place 2 slices of lettuce leaves onto bottom half of each Muffin. 2. Top with half of the egg salad, 2 slices of Smoked Salmon, cucumbers and tomatoes. 4.
