Soycutash

This yummy organic vegetable blend is comprised of soybeans, corn and red peppers. The soybeans replace the lima beans that are traditionally found in succotash, leading to the clever word-play of "soy"cutash. Cute name, but more importantly, a delicious and healthy staple in my freezer. My simple serving suggestion is to cook it with a little kosher salt till tender, and serve over a bed of brown rice. It's a filling and satisfying quick vegetarian meal, and leftovers are great for lunch the next day.

I've been getting this succotash for years. I can't stand lima beans but I love edamame. The corn is so sweet and makes it so much better than normal succotash. We love it!

I`ve grown fond of soycutash. Its a good staple to have in the freezer.I usually buy at least 3 bags.I use a half bag at a time.Cook in water or broth at med.heat with a see-through lid for 7-10 minutes.Season with sea salt.

I always keep a few bags in the freezer to use in making a yummy and quick tortellini pasta salad.. Just toss a bag of Soycutash with a bag of cooked TJ's cheese tortellini and dress the whole thing with TJ's Tuscon Italian. So fast, so easy and so delicious. My kids love this dish as well.
My boyfriend brought this home from Trader Joe's because he loves corn and I am a vegetarian. Had my doubts but after the first bowl, I was hooked! (I mus t add that the first bad he brought home, he ate the whole thing and did not share.) It is quick to make in the microwave and taste good just as it is!
