Spiced Up and Healthy Punjab1 jar Trader Joes Spinach Punjab Sauce1 large can Trader Joes organic diced tomatoes 1 container Trader Joes sliced baby bella mushrooms 1 package of Trader Joes extra firm tofu or any lean meat enough for 4 servings 1 bag Trader Joes prewashed organic baby spinach 1 teaspoon prediced garlic 1 teaspoon prediced ginger 2 teaspoons Curry Powder 2 Bay leaves 1 teaspoon Trader Joes olive oil 2 tablespoons Trader Joes sliced almonds Frozen Trader Joes jasmine rice 1. Take 1 teaspoon of TJs olive oil and toss it in a wide, deep, & lidded cooking pan. Pan should be on a medium to low heat. Lightly saute' the teaspoon of garlic & ginger until fragrant but not browned. 2. Add one jar of TJs spinach punjab sauce. 3. Crumble the extra firm tofu into the punjab sauce. (or add other lean meat substitute) 4. Add 2 Bay leaves and 2 teaspoons of curry powder and stir mixture. 5. Drain liquid off diced tomatoes and add to mixture.Add presliced mushrooms to mixture. 6. Bring mixture to a low simmer and cover allow mixture to cook for 15 minutes. 7. Prepare jasmine rice as instructed on the package (5 mins microwave) 8. After putting jasmine rice in the microwave turn the heat off on the punjab mixture and add the almonds then the spinach. 9. Mix the spinach in slowly, the spinach should wilt from the heat of the punjab mix. 10. Place delicious rice on a plate then spoon punjab mixture over rice. Serves 4.
