Spicy Fall Slaw

4 cups shredded green cabbage
2 cups shredded red cabbage
1 stalk celery, sliced
1/4 cup minced green onion
1/4 cup snipped parsley
1/4 cup crystallized ginger bits
1/4 cup pumpkin seeds
1 small red skinned apple, cored and cut into small dice
1 small green skinned apple, cored and cut into small dice
Dressing
2 Tbsp canola oil
2 Tbsp cider vinegar
2 Tbsp Trader Joe's Pumpkin Butter
2 Tbsp mayonnaise
1/2 tsp Trader Joe's Pumpkin Pie Spice
1/4 tsp crushed red pepper
2 Tbsp frozen apple juice concentrate, thawed

Combine the salad in gredients in a large bowl. In a sall bowl whisk together the ingredients for the dressing till well blended. Toss the dressing with the salad. Serves 6
