Tamale Bake Casserole1 lb ground beefonion I cup chunky salsa verde (green) I can diced tomatoes and green chilies DRAINED 1 box of Trader Joes corn bread mix 1 cup creamed corn 1 can sliced black olives drained I cup shredded mexican cheese blend preheat oven to 350. Brown beef in pan and break up clumps, add onions , drain fat, add Ro-tel and salsa verde stirring until well combined, pour into a smallish (1.5 qt.) casserole dish. In a separate bowl stir Corn bread mix and 1 cup creamed corned just until combined, pour over beef mixture in casserole, sprinkle with olives (if desired) Bake in preheated over for 45-50 minutes at 350. (If edges start to brown cover with aluminum foil) Top with shredded cheese and bake for 5 more minutes or until cheese is melted. If you don't like spicy sub out regular diced tomatoes for the green chile/diced tomatoes and reg mild salsa for salsa verde.
