The Best Veggie Burger Ever

This veggie burger is perfect. It holds together well and the combination of seasonigs, whole grain and legumes give it a very "meaty" texture.

1 cup of bulgur
2 cups boiling water
1/2 cup chopped cilantro
1 can Trader Joes refried beans
1/3 cup Trader Joes egg whites
1 whole onion chopped finely
1/3 cupTrader Joes brand salted sunflower seeds
1/2 tsp cayenne
1 tsp ground cumin
Trader Joes brand hummus

Pour 2 cups boiling water over 1 cup of bulgur and cover. Let sit for a mininum of one hour. If any water remains, drain it off.

In a frying pan, sautee onions in 1 tablespoon olive oil until softened and a bit browned.

Combine softened bulgur with beans, cilantro, egg whites, onions, sunflower seeds, cayenne and cumin. Chill mixture for 1 hour. Form into eight patties. Heat 1 tablespoon olive oil in heavy skillet. Panfry for 6 minutes and carefully turn and cook for four additional minutes. Serve on a whole grain English muffin, in a pita or wedged between two pieces of TJ's garlic naan. Top burger with generous dollop of hummus.
