The Linda DeliteThis recipe is named after my mother who invented it. It's a quick and delicious sandwich but you can save even more time by making and keeping the cinnamon raisin peanut butter on hand (you won't be sorry) and therefore omit the raisins, sugar and cinnamon below.The combination of peaches, cinnamon, raisins and peanut butter is unexpected but incredible. Toasting it just makes it more irresistible. Ingredients: 2 slices of your favorite Trader Joe's bread 2T Trader Joe's Natural Creamy Peanut Butter w/ salt 1/2 peach, in 1/4" slices 1T currants or raisins 1/2t sugar 1/4t cinnamon, or to taste 1 drizzle Trader Joe's Mesquite Honey (optional) cooking spray 1. Spread peanut butter on one slice of bread. Sprinkle cinnamon, sugar and raisins over the peanut butter so they stick. Next, arrange the peaches slices on top, drizzle with honey and cover with the remaining slice of bread. 2. Warm a skillet on medium heat. Once warmed, spray with cooking spray and place sandwich in the skillet. press down lightly so everything adheres. Cook for about 2 minutes or until underside is brown, spray the top of the sandwich with cooking spray and flip over. Cook for an additional 2 minutes or until the bottom has browned.
