Veggie Curry with Bacon

a half pound bacon
2-3 chicken breasts, chopped up. (I use TJ's frozen--I cook them a bit until they're mostly thawed, then I fish them out and chop them up. Easiest to chop while middle is still frozen.)
Trader Joe's Curry Simmer sauce
assorted veggies (onion, mushrooms, carrots, whatever you like)
optional: a cup or so of TJ's tail-off frozen shrimp.
1 teaspoon-1 Tablespoon honey, depending on taste
1/2 cup sour cream.

cook the bacon in a huge pan. Pour off almost all of the grease. Cook the chicken in the left over grease along with the onion. Add veggies and simmer sauce and cook over lower heat until it's all done. Add honey. Crumble bacon and add that. Turn off heat and add the sour cream.

Bacon really adds to the flavor without overwhelming it.

I like slightly thicker sauce so I add a 1 to 2 tablespoons of cornstarch, dissolved in a 1/4 cup of chicken broth. Add to the goop in the pan and bring to a boil, stirring, for a full minute.

And, yeah, I gave my own recipe "excellent" because it really is yum.
