Wild Blueberry and Sliced Almond Muffins-So good!

These are so good! Have made these a million times and the nurses love these at work! Enjoy!

1 large egg(beaten)
1/2 cup milk
1/3 cup vegetable oil
2 cups Trader Joes King Arthur unbleached all purpose flour
1/2 cup Trader Joes Organic Sugar
1/2 cup Trader Joes Organic Brown Sugar
1tsp baking powder
1tsp baking soda
1/4 cup Trader Joes Nonfat Greek Yogurt
1/2 Cup Trader Joes Dried Wild Blueberries
1/4 cup of Trader Joes Raw Sliced Almonds
1tsp Vanilla(optional)
1/2tsp salt
Zest the skin of one orange.

Blend all dry ingredients together.Add all the rest of the ingredients to the dry mixture and mix well.

Put into greased muffin tin. I use Trader Joes olive oil spray and a light dusting of flour over tin.Bake at 350 degrees for 16 minutes or until top of muffins is golden brown.

I always top the muffins with a few sliced almonds and a pinch of organic white sugar on each one before baking. It looks so pretty and will impress your guests!

Extra:To zest the orange just use your cheese grater and use the fine side on it and tap the grater on the side of the bowl to get the zest off. It really does add a wonderful flavor and aroma to the muffins.

Remove from oven and enjoy! Add a little honey to make them even yummier!
