I substituted buttermilk in place of water & beat the egg whites then folded in and got a pancake (or waffle) every bit as good as the ones made with wheat.
At $2.99 Trader Joe's Gluten Free Pancake and Waffle Mix is about a third the cost of most gluten free mixes.

Generally, GF products tend to be dense. That said, this is quite tasty in comparison and the coffee cake recipe in the package is tasty as well. GF or not, it is quite good. I have since added applesauce which makes it moister.
