Light Chicken Curry Salad
I love the newest Chicken Curry Salad that was being demo'd today..but oh, the fat. I came up with a lighter version tonight.
1 package of TJ's Simply Roast Sliced Chicken Breast(in section of precooked Chicken)
1 cup of Greek Yogurt 2%
1/4 cup of light Mayo
5+TB of Curry Powder (I like a lot)
Lime Juice to taste
A little Honey
1 teaspoon+ of Mango Butter to taste
Small Grapes or Large Grapes halved
Golden Raisins or any raisins
Slivered Almonds
Pepper/Salt
Broccoli/Carrot Slaw or other Greens
Cut up the chicken breasts into chunks. Toss in bowl with remaining ingredients, except Slaw. I put the Salad on the Slaw but it would be great on any type of greens. Makes enough for a couple of servings. Of course this would be yummy in a sandwich too.
