Beanless Veggie Chili with Hominy and Soyrizo

1 cup onion, chopped 2 cloves garlic, chopped 2 cups bell peppers, chopped (any color) 1 cup carrots, chopped 1 tbsp cumin 1 tsp coriander 1 28oz can tomatoes 1 25oz can hominy, drained 2 tbsp tomato paste 1 cup water 1 package Trader Joe’s Soyrizo Saute onion, garlic, carrots, bell peppers until onions are translucent. Add spices and stir 1 minute until fragrant. Add chopped tomatoes, hominy, tomato paste, cup of water. Bring to boil. Stir infrequently, to make sure not burning at bottom. Can add water as needed for right consistency. After ~20 minutes (when carrots are just tender), add entire package of Soyrizo. Cook only 3-5 more minutes. Salt to taste, but note that the tomatoes, hominy, and soyrizo may add enough salt already. Top with sour cream, cheddar cheese, avocado, raw radish slices, etc. Enjoy! This is vegan if you skip the dairy-based garnishes. The Soyrizo itself is spicy, but if you want extra heat you could add a minced jalapeño (seeded or not) in the raw veggie step. Is even better the next day!
