Chicken and Dumpling Stew

Comfort food ala Trader Joe’s. Dumplings: 2 cups flour 1 1/2 tsp baking powder 1/2 tsp salt 1/4 cup chopped parsley or 4-6 frozen parsley cubes 2 tbsp melted butter 3/4 – 1 cup milk Mix dry ingredients, mix in butter and milk until it just forms a batter, do not overmix. Cover until needed. To add the dumplings to the stew you can either spoon them in by the teaspoon at step 6 or tear and make teaspoon sized chunks before assembling the stew. Stew: Ingredients: 2 tbsp olive oil 1 container Trader Joe’s Mirepoix 6 tbsp butter 6 tbsp flour 1 tsp dried basil or thyme 1/4 cup Two Buck Chuck Chardonnay (optional) 4 cups chicken broth + 2 cups water 2 chicken breasts, cut into cubes 1/2 cup frozen peas 1/4 cup cream or half & half 1/4 cup chopped parsley or 4-6 frozen parsley cubes salt & pepper to taste. 1. Heat the olive oil in a pan, add the Mirepoix and saute until softened, around 6-8 minutes on medium high heat 2. In a large pot melt the butter and add in the flour and thyme, whisking for 1-2 minutes. 3. Add in the optional white wine, drink the rest with the stew. 4. Stir in broth, water and mirepoix and bring to a simmer 5. Stir in the chicken and simmer for 6-8 minutes until chicken is cooked through 6. Add the dumplings and cover for 15 minutes. Do not uncover while dumplings are steaming. 7. Stir in the peas, cream & chopped parsley. If a thicker stew is desired, dissolve 1 tbsp flour in 1/4 cup water and add Salt & pepper to taste. Serves 4-6
