Crab Chowder

1 box of Corn Chowder with Roasted Red Pepper 1 can of Crab meat 1 Package of Roasted Corn 1/2 medium onion 1 red pepper 3 medium Gold potatoes 1/2 tsp cayenne pepper 2 tbl spoon canola oil 1 cup water 1/2 cup heavy cream, or half and half 1 cup Shredded Cheddar Cheese (extra for garnish) Cilantro (for garnish) Black pepper Salt (sea salt) Prep: Chop onion, Red Pepper, and Potatoes into a small dice. Drain crab Cook: Heat large pot over medium high heat. Add oil and heat. Add potatoes cook for 5 mins. Add Crab,Peppers and onions cook for 5 mins. (stir mixture frequently try to scrape bottom of pan) Add Cayenne Pepper, salt and pepper to taste. Deglaze pan with 1 cup of water. (stir and scrap up the little bits at the bottom of the pan) *lower heat to medium low. Add the whole box of the soup. Heat just to simmer. Add Roasted Corn. Heat just to simmer, lower heat if needed, stir to avoid burning to the bottom. Add Cream or Half and half (optional-add if it’s too spicy or for extra creaminess) Cook for 20-30 mins until potatoes are cooked to desired firmness. Stir in cheese Serve and enjoy! top with a little shredded cheese and cilantro for garnish. This is a favorite Trader Joe’s quick and easy meal! I love to serve it with one of the good crusty breads TJ’s has!
