Coriander Chicken

This fast and easy supper for one will be on your table in less than 20 minutes, and with only 4 ingredients. Every ingredient was purchased from Trader Joe’s. 1 boneless chicken breast (from the package of boneless, skinless breasts in the fresh meat aisle) 1-2 tablespoons of creme fraice (from the fresh dairy aisle) 1 handful of chopped cilantro (coriander) (from the fresh herbs aisle) Olive Oil or Butter Salt and Pepper To serve one, pound a chicken breast flat and thin with a meat mallet or a rolling pin. Add it to a hot pan with a bit of butter or olive oil, and brown it thoroughly, to your liking. When the chicken is substantially cooked, add 1-2 tablespoons of creme fraiche and 1 hand full of freshly chopped cilantro, and stir quickly to melt the creme and wilt the herbs. If you remove it immediately, your sauce will be light and creamy. If you leave it a bit longer and continue to toss, it will lose the white color and turn into a rich and buttery flavor, as shown in photo. Salt and pepper to taste, and serve immediately.
