Thai Chicken Soup

3 Boneless Skinless Chicken breasts cut into chunks 2 containers of Trader Joes Organic Chicken broth 1 can Trader Joes organic diced tomatoes 1 package of Trader Joes sliced mushrooms 1 white or yellow onion chopped 2 tsp Trader Joes crushed garlic 1 1/2 jars of Trader Joes Red Curry Sauce 1 bunch of cilantro 1/4 cup Trader Joes Coconut Milk 2 lemons juiced 2 packages Trader Joes organic frozen brown rice Salt and Pepper to taste In a large pan saute onion, garlic and mushrooms in Olive Oil until onions are translucent. Drain the tomatoes and add them. Add chicken broth, curry sauce, coconut milk and lemon and bring to a boil add the uncooked chunks of chicken and boil to cook. When finished cooking add the brown rice. Finish it off with salt pepper and cilantro. Done in about 10-15 minutes. (if you have it on hand lemon grass or kaffir lime seasoning add a little extra zest to this recipe). And as a suggested alternative use seafood broth instead of chicken broth and shrimp instead of chicken.
