Brown Rice and Beans(1 vote)Rate this listing Lundberg’s brown rice is very flavorful, loaded with nutrients and fiber-rich. The black beans are high in protein and rich in potassium. This recipe is excellent for people who are on a sodium-restrictive diet as NO salt is needed to enhance flavoring, and the salsa sodium content is low. The broccoli also is a good source of calcium and high in vitamin C. Ingredients: 1 cup Lundberg’s Countrywild Whole Grain Brown Rice 2 cups water 3 tbsp. Olive Oil 4 cloves garlic minced 1 large white onion chopped 1 jar Amy’s Organic Salsa (or other favorite organic salsa) 1 15oz. can organic Black Beans 2 cups broccoli florets (fresh or frozen) Boil 1 cup of brown rice in 2 cups of water. Simmer covered for 30 minutes (or until all liquid is absorbed). Lightly steam broccoli in separate pot until tender. While rice and broccoli are cooking, sauté onions and garlic in large fry pan until onions are translucent. Spoon salsa into the fry pan with the onions and garlic. Stir and simmer to blend flavors. Transfer all the rice and the broccoli into the fry pan. Stir gently all ingredients. Submitted on 01/28/2008 by CarolDawn
