Black Bean Taquitos - 2008/05/17 19:34
Wow, the Black Bean Taquitos were great! They were the perfect party, appetizer, and snack food. The fridge in our garage was filled with beer and wine, but the freezer portion was usually filled with boxes of the Black Bean Taquitos.
Because they didn't have either meat or cheese they suited almost anyone's diet (vegetarian, vegan, lactose intolerant, etc). We used to leave them in the oven a few minutes extra to make them more crispy. They had a nice flavor that could be easily doctored to suit other themes, so if you wanted Mexican you sprinkled on cumin before baking and dipped in salsa when eating. If you wanted Indian you sprinkled on some garam masala and dipped in coconut sauce when eating. If you wanted Chinese you sprinkled on Five Spice and dipped in Hoisin or Sweet & Sour.
I can only guess that because these didn't have a wildly distinct flavor they didn't take off. And maybe because many of us Americans expect any Latin food to be smothered in cheese and these weren't. To me though these Black Bean Taquitos were superstars with a great texture and a flavor that could be easily modified to suit your mood, your guests, or a party theme. These are missed.
