From experience (my wife is a registered dietician and I am a chef) this product is fantastic for a number of reasons. For the scientfically challanged, pasteurization does NOT destroy the nutritional value of the egg. From a culinary standpoint, these are some of the best eggs I've ever used or tasted.
For anyone who is concerned about foodborne illness, these are the answer to a prayer! They were a terrific source of nutrition for my mother-in-law when she was going through chemo. We were so thankful for them but are now very disturbed that we can no longer buy them in our area.
